You'll learn how they create their award-winning spirits; from the selection and distillation of botanicals, to the intricate field-to-glass journey of the ethically sourced speciality coffees of their famous Conker Coffee Liqueur. The Cotswolds Distillery was established in 2014 as the first-ever full-scale craft distillery within the Cotswolds Area of Outstanding Natural Beauty (AONB). We produce a range of “Outstanding Natural Spirits”, including the first-ever Cotswolds Single Malt Whisky, featuring Cotswolds-grown barley. We also produce the award-winning Cotswolds Dry Gin, featuring local lavender from Snowshill, as well as a full range of spirits, from Absinthe to Distilled Espresso Martini. Tours at Cotswolds Distillery Escaping to a holiday cottage for New Year is the perfect way to celebrate and welcome in the new year in style.

As we as gin drinkers have become more sophisticated, the choice to keep those hydrophobic essential oils suspended in a gin has become recognized as a design choice. Cotswolds Dry Gin proudly proclaims that they do not chill filter their gin. Cotswolds uses “10x the average amount of botanicals” in their copper pot still [ source]. The gin is distilled from neutral grain and features some local touches, including lavender from the picturesque and renowned Snowshill Lavender Farm. Tasting NotesLife at the distillery is firmly rooted in the beautiful Cotswolds surroundings; 100% of the barley used to make the whisky has been grown at neighbouring farms, and the lavender used to maketheir Cotswolds Dry Gin islocally grown at Snowshill Lavender Farm. You’ll even get to apply a wax seal and label to your 70cl bottle so it’s ready to be taken home the very same day.

The most sought-after and exclusive holiday properties, promising the ultimate in home comforts, a world away from home. Highly aromatic, you can smell Cotswolds Dry Gin intensely just when opening the bottle— or from across the table while someone else is pouring. Instantly, a ghostly specter of juniper hangs in the air. For something a bit different, how about a Kaffir Lime and Lemongrass, Earl Grey Tea or Douglas Fir infused gin? Twisting Spirits is run by a husband and wife team Mary and Rich, who started distilling in their garage in Oxfordshire in 2017 before moving to a small unit in Tewkesbury. They do everything by hand, from distilling and bottling to labelling and boxing the gins.In this fabulous experience, you can join the Salcombe Distilling Co. team at their waterside Distillery Bar overlooking Salcombe Estuary in Devon to uncover the art of distillation. Another sport-inspired gin is Polo Gin, which was founded by a former professional polo player after injury forced him to retire from the sport. After discovering that British polo players in India were among the first people to mix gin and tonic in India in 1857, Polo Gin was born, a smooth easy-drinking gin that’s made using sustainable, organic production methods. It wasn’t that long ago, that a gin that made a cloudy gin and tonic, was considered faulty. This effect is referred to by Absinthe drinkers as a Louche or more generally as the Ouzo effect. When a spirit contains a large amount of hydrophobic essential oils— commonly found in botanicals such as anise— normally soluble in ethanol begin to come out of solution as water is added. As you drip water into Absinthe, Ouzo or gins like Cotswolds Dry Gin, cloudiness begins to appear. Nestled amongst the rolling hills of the Cotswolds countryside, the Cotswolds Distillery was born from a dream to produce Outstanding Natural Spirits in one of the most beautiful regions in the world. As part of our Smithery Sessions series, we have teamed up with the wonderful creatives at The Crafty Hen to host a dried floral wreath making class at our Sipsmith Distillery.

Located just outside of the beautiful Cotswold town of Burford, The Maytime Inn is an elegant Cotswold pub specialising in gin. The Slaughters Manor Hotel – Lower Slaughter Drawing inspiration from their surroundings, the Cotswolds Distillery is committed to supporting and celebrating the Cotswolds AONB. They use locally grown barley to make their whisky and they believe in the importance of traditional craftmanship. Despite the typical botanicals used in gin-making not being native to the UK (e.g., juniper), Cotswolds Distillery still strive to support and celebrate their surroundings by using locally grown lavender in their Dry Gin. They also produce a Wildflower gin range as well as a Hedgerow Gin using locally grown botanicals and fruit. From start to-finish, everything is controlled by hand and timed to perfection to ensure that the spirits produced are of the highest quality and flavour.Cotswolds Dry Gin is very restrained in its use of cardamom and lavender. Rather than hit you in the face with it— despite the 10x botanical remark— the two add color but never take center stage.
